SEA SCALLOPS WITH SNOW PEAS 
1 1/2 lbs. sea scallops
1 lb. snow peas
2 cans water chestnuts
2 tsp. ginger
Sprinkle of dried shallots or leeks
4 tbsp. salad oil
2 tbsp. cornstarch
4 tsp. soy sauce
1/2 tsp. salt
Prepared rice for 4-6 persons

Stir fry sea scallops, snow peas, water chestnuts, ginger, and shallots in salad oil. Add cornstarch, soy sauce, and salt; stir until thickened. Serve over rice.
