PUMPKIN-STREUSEL COFFEE CAKE 
1/2 c. butter
3/4 c. sugar
1 tsp. vanilla
3 eggs
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 c. sour cream
1 3/4 c. 2 c. pumpkin
1 egg
1/3 c. sugar
1 tsp. pumpkin pie spice

STREUSEL:

1 c. brown sugar
1/3 c. butter
2 tsp. cinnamon

Cream butter, 3/4 cup sugar and vanilla; add 3 eggs beating well. Combine flour, baking powder and soda. Add to butter mixture alternating with sour cream. Combine pumpkin, 1 egg, 1/3 cup sugar, and spice. Spoon 1/2 of batter in 9 x 13 pan. Sprinkle 1/2 of streusel over batter. Spread pumpkin mix over streusel. spread remaining batter over pumpkin. Sprinkle remaining streusel on top. Bake at 325 degrees for 50-60 minutes until toothpick inserted in center comes out clean. Serves 12.

This recipe was easy and delicous. Don't let the amount of batter fool you! I thought it wasn't enough, as when I halfed it, it spread pretty thin in the pan. Wow, did it rise to make a beautiful, thick, moist cake with a yummy pumpkin filling. My family and friends love it!

This recipe is delicious! But, I made one change -- I added 2 teaspoons (instead of 1) of pie spice. I also used closer to 1 and 3/4 cups pumpkin rather than 2 cups. The batter is pretty fluffy and thick and therefore hard to spread in the pan, but it truly does puff up when baking, so just do your best to spread the layers and you'll be happy with the end results. The streusel is quite wet (heavy on the butter) but it works well with the recipe.

This was delicious. I made it using 2 cups and it was a little too much pumpkin. So I am trying it with less. I also had a hard time with the topping. I added less butter and more brown sugar until it was the right consistency

I made 2 streusel versions. As described in the recipe for the center and one where I cut cold butter into sugar and some flour for the top. I like a crumbly topping on my coffee cake.
