YELLOW SQUASH CASSEROLE 
4 yellow squash, cooked
1 carrot, finely grated
1 onion, finely chopped
2 tbsp. pimento, chopped
1 c. sour cream
1 can cream of chicken soup
1 sm. pkg. Pepperidge Farm Stuffing
1 stick butter

Melt butter in a 2 quart casserole dish. Mix stuffing with butter, saving some for topping. Mix all other ingredients and place in the casserole dish. Sprinkle on topping and bake at 375 degrees for 30 minutes. This may be divided before cooking and frozen.
