FRENCH COCONUT PIE 
3 whole eggs
1 c. sugar
1 stick melted butter
3 tsp. lemon juice
1 tsp. vanilla
1 c. flaked coconut
1 unbaked 9-inch pie shell

Beat eggs slightly, add sugar and melted butter. Add lemon juice and vanilla. Stir in coconut. Pour into pie shell and bake at 350 degrees about 30 or 40 minutes.
