PINEAPPLE COCONUT PIE 
1 lg. can crushed pineapple
1 (7 oz.) can coconut
2 tbsp. flour
2 c. sugar
1 tsp. salt
1 stick butter
4 eggs
2 (9") pie shells

Cream sugar, butter and flour. Add slightly beaten egg. Add pineapple, salt and coconut. Pour in unbaked pie shells. Bake in 350 degree oven for 45 minutes or until done.

When I was young our next door neighbor brought one of these to our family. I fell in love with the pie! She gave me her recipe and I have been making for my family for 60 years. Always family and special occasion favorite. I quit making just one at a time! Yummy and so different from the ordinary.
