BUTTERMILK COCONUT PIE 
1/2 stick butter
1 c. sugar
2 eggs
1/3 c. buttermilk
1/2 tsp. vanilla flavoring
1/2 c. coconut
Unbaked pie shell

Cream butter with sugar. Add eggs and buttermilk. Beat well. Add vanilla and coconut. Bake in uncooked pie shell for 30 minutes at 375 degrees.
