SUMMER STUFFED YELLOW SQUASH 
8-10 med. yellow squash
1/2 c. chopped green pepper
1 med. tomato, chopped
1 med. onion, chopped
2 slices bacon, fried crisp & crumbled
1/2 c. shredded cheddar cheese
1/2 tsp. salt
Dash of pepper
butter

Wash squash and cook whole squash in water until just tender. Cool slightly after draining. Cut a thin slice from top of each squash; remove seeds. Combine remaining ingredients except butter; mix well and spoon into squash shells. Dot each with a pat of butter and bake at 350 degrees for 30 to 40 minutes. Yield: 8 to 10 servings.
