1/2 c. butter
1/2 c. creamy peanut butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla
1 box of mini peanut butter cups

Cream first five ingredients and vanilla. Sift dry ingredients and blend to cream mixture. Roll dough into 1 inch balls and place in mini muffin baking tins. Bake at 375 degrees for 8 to 10 minutes; or until lightly brown. Immediately place peanut butter cup on top of cookie and press down until only the top of the peanut butter cup shows. Let cool 10 minutes, then remove from tins. Makes 40 cookies. (Good Christmas cookies.)
