CRISPY FRIED FISH 
2 egg yolks
1 tbsp. cider or wine vinegar
Salt and pepper
Vegetable oil
1 c. flour
1 1/2 lbs. cod fillets

Combine yolks, 1 cup water, vinegar, 1 teaspoon salt, 1/4 teaspoon pepper and 1 tablespoon oil. Gradually stir into the flour until smooth. Let stand 30 minutes. In a deep fryer or other deep pot, heat about 3 inches of oil to 375 degrees. Cut fish into serving pieces. Dip fish into batter and let excess drip off. Slip a few pieces at a time into hot oil and cook until golden brown, about 5 minutes. Drain on paper towels.
