“CRISPY FISH BATTER” IS IN:

CRISPY FISH BATTER 
1 cup self-rising flour
1 cup plain flour
1/2 cup wheat cornflour
1 tsp. turmeric
1 tablespoon lemon pepper seasoning
1 tablespoon olive oil
2 egg whites, beaten to soft peaks
freshly ground salt and pepper to taste
approx. 1 pint (600ml) soda water

Sift all flour, turmeric, lemon pepper, salt and pepper into a non-reactive mixing bowl. Drizzle olive oil over top and make a well in middle of flour. Gradually add soda water, mixing constantly, until you have a smooth batter. Gently fold in egg whites until incorporated but do not over-mix or the air will be lost from the egg white. Coat fish with flour, dip in batter and deep fry.
