CRISPY FISH FILLETS 
1/4 c. butter
1 tsp. lemon juice
1/2 c. corn flake crumbs
1/2 c. dry bread crumbs
1 tsp. salt
Dash pepper
1 lb. fish fillets (flounder or sole), cut in pieces
Paprika

Place butter and lemon juice in a 11 3/4 x 7 1/2 x 1 3/4 inch baking pan. Microwave on High 4 to 5 minutes.

Mix together crumbs, salt, and pepper. Dip in lemon butter then coat with crumbs. Place in pan with remaining butter. Sprinkle with paprika. Microwave uncovered on High. Halfway turn fish and sprinkle with paprika. Stand for 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
