MARINA'S GARLIC BAKED CHICKEN 
2 lbs chicken parts
4-5 red potatoes, cut in four
2 bags frozen California mixed vegetables (or any kind)
1 onion, sliced
1 small jar chopped garlic
2 packets dry Italian dressing
white wine

Use a roasting pan. Preheat oven to 425°F.

Pour white wine and a little water to about 1/4 inch in the pan. Add the chicken. Put generous amounts of garlic and spread on each piece. Sprinkle 1 dressing packet on top of chicken. Add potatoes, frozen vegetable and onion. Sprinkle the 2nd dressing packet on top. Cover with foil for the first 1/2 hour. Remove cover and continue to cook for 1 hour.

Baste chicken and vegetables during cooking.

Yum yum yum. So good. I didn't know if I should cook with skin or not, so I cooked with skin on and didn't eat it. I peeled the skin back and seasoned the meat, put skin back on and seasoned the skin too. I cut the uncovered time to 30 minutes and it was perfect! Awesome recipe. I was bored with plain chicken.
