BAKED GARLIC CHICKEN WITH
ROASTED VEGGIES
 
3 large boneless skinless chicken breast, cut into halves
1 green pepper, thinly sliced
1 red pepper, thinly sliced
1 yellow or red onion, thinly sliced
1 to 2 Roma tomatoes, sliced
3 tablespoons roasted garlic and herb seasoning
1 to 2 tsp. garlic salt
2-3 tbsp.Parmesan Cheese, to taste

In a 9x13 glass dish (sprayed with canola cooking spray) lay your boneless skinless chicken breasts flat. Spray with a light coating of canola cooking spray. Take thinly sliced peppers, onion, and tomato and tuck around edges of pan. Some may overlap chicken, this is ok.

Sprinkle roasted garlic and herb seasoning over EVERYTHING! Top with garlic salt. Cover with aluminum foil and bake for 45-60 minutes at 375°F.

For the last ten minutes remove foil, sprinkle with any extra seasonings (more garlic salt, pepper) and Parmesan cheese to taste. I use about 2-3 tablespoons.

This chicken goes well over angel hair pasta with garlic and herb butter sauce!
