EASY ZUCCHINI PIE 
Tastes like apple pie!

4 to 5 cups zucchini, peeled and sliced
2 tsp. lemon juice
1 1/4 cups sugar
2 tbsp. cornstarch
1/2 tsp. cinnamon
dash of salt
1 pkg. pie crusts (I use Pillsbury)

Mix zucchini and lemon juice and let stand for 1/2 hour.

Add rest of ingredients; mix. Place in prepared pie crust. Dot with butter. Cover with top crust.

Bake at 350°F till golden brown.
