STUFFED ZUCCHINI EASY YUMMY
IMPOSSIBLE PIE
 
1 lb. ground beef sirloin (or lean chuck)
1 large onion, chopped
3 cloves garlic, chopped (or 1 tsp. garlic salt)
3 stalks celery finely, chopped (or 1 tsp. celery salt)
1 medium zucchini, chopped
1/2 tsp. each salt and pepper
2 tbsp. Worcestershire sauce
1 can tomato soup
2 cups shredded cheddar cheese, divided
3/4 cup Bisquick baking mix
1 1/2 cups milk
3 eggs
1 large tomato, thinly sliced

Preheat oven to 400°F and spray a 9x11-inch cake pan with Pam.

Brown onion, garlic, celery and ground beef. Stir in zucchini, salt and pepper, Worcestershire sauce and tomato soup. Mix ingredients together and place in prepared pan. Sprinkle 1 1/2 cups shredded cheese over mixture in pan. Beat together Bisquick, milk and eggs for 20 seconds until smooth and pour this over the cheese.

Bake at 400°F for 40 minutes or until knife comes out clean. Place slices of tomato on the baked pie and sprinkle with the rest of the cheddar cheese and bake for an additional 3 to 4 minutes.
