“CHICKEN AND RICE CASSEROLE” IS IN:

CHICKEN AND RICE CASSEROLE 
1 whole chicken, cut up
1 (10 oz.) can cream of mushroom soup
1 (10 oz.) can cream of chicken soup
1 (10 oz.) can cream of celery soup
1 cup rice
1/2 stick of butter, diced

Preheat oven to 350°F.

Combine the rice, butter and three soups in a large bowl. Put them in a large casserole dish or a 9x13-inch pan. Put the chicken on top. Spice with salt and pepper as desired.

Bake at 350°F for 35 to 40 minutes.

This recipe was a hit at my house. The only substitution I made was 2 cream of chicken soups with the cream of celery soup instead of adding the mushroom soup. Thanks for a great recipe.

Extremely tasty dish that was easy to prepare. I used 4 large chicken breast halves rather than a whole chicken. I would give it 5 stars, but the rice came out a bit crunchy and the flavor was extremely rich. Next time I will probably parboil the rice first or I will substitute 1 can of soup with a can of water.

Those who substituted Onion soup mix. Don't you have to add water to the soup mix pkt?

Not if I remember correctly. You have the soup, water to equal the 2 cans of soup, and then the broth that comes from the chicken while cooking. The dry onion soup powder can be just a little Not the whole packet so does not need water added. Just make sure you have enough water for the rice.

If I make this recipe the day before in order to cook it after church what would happen to the raw rice sitting in the soups? Would it matter? Would it be better to cook it a little and then reheat it Sunday?

I added minced garlic, onion powder and some cayenne to the rice. Then topped the finished product with mozzarella cheese. Delicious!

Great recipe! I jazzed it up a bit by adding a can of biscuits to the top just before it finished cooking so it had a golden brown biscuit topping when finished. Good stuff.

I have a quick recipe very similar. Boil 3 chicken breasts, cut them into bite size pieces. 1 can cream of chicken, 1 can cream of mushroom, and a healthy scoop of sour cream. Mix together with chicken, cover and bake 350°F for 40 minutes. Here is the best part, take to rings Ritz crackers and crunch up and pour on top of chicken. Place back into oven uncovered for another 8 minutes. I'm 25 years old and pass on steak and crab for my birthday dinner for this!

I took one one can of soup out and added a 1 1/2 cups of water then added seasoning to taste and 2 cups of rice instead of one, cover for one hour at 350°F.

I cooked my rice with a pack of onion soup mixed in. Then I added garlic powder, chopped onions and 1/2 jar of Ragu cheese sauce when I combined the mixture.
