KAIT'S CHICKEN BROCCOLI AND RICE
CASSEROLE
 
1 lb. chicken (I use tenderloins)
2 heads broccoli
2 (10 ea.) cans cream of chicken soup
1 can water (use empty soup can)
1/2 cup mayonnaise
2 tbsp. curry powder
1 cup rice
bread crumbs (Progresso or 4C)
grated Parmesan cheese
butter

Preheat oven to 350°F.

Combine and cook cream of chicken soup, water, mayonnaise and curry powder. Cook or steam broccoli, prepare rice and sauté chicken in butter.

In 9x13-inch pan, lay rice on bottom, chicken and broccoli on top of that, and cover with sauce. Top with melted butter, bread crumbs and Parmesan cheese.

Bake at 350°F for 25 to 30 minutes.
