LOW CAL CHICKEN MUSHROOM
CASSEROLE
 
2 broiler fryers, cut up
1 c. tomato juice
1 lb. sm. white onions
2 c. sliced celery
1 1/2 tsp. dried tarragon
2 tsp. salt
1/4 - 1/2 tsp. pepper
1 lb. sliced fresh mushrooms

Pat chicken dry, arrange on rack over broiler pan. Place under preheated broiler 6 to 8 inches from heat. Broil until brown, about 7 minutes each side. Pour tomato juice into Dutch oven. Add onions, celery and tarragon. Add chicken, sprinkle with salt and pepper. Place chicken breasts on top. Simmer covered for 30 minutes. Add mushrooms, placing below chicken pieces. Continue simmering until chicken is tender, about 15 more minutes.
