SMOKY GRILLED GUACAMOLE | |
2 ripe avocados, halved, peeled, and pitted 2 jalapenos Olive oil, for brushing 3 tbsp. chopped fresh cilantro 3/4 tsp. salt 2 tbsp. fresh squeezed lime juice Brush the grill grate with oil or Pam cooking spray. Preheat to medium high heat. Lightly brush avocados and jalapenos with olive oil. Place both on grill. Close the cover and cook the avocados until lightly charred, about 1 minute per side. Cook jalapenos until blistered and softened, 1 1/2 to 2 minutes per side. Remove form heat and let cool. (Can peel and seed jalapeno for less heat.) Fine chop, then transfer to medium bowl and combine with avocado, cilantro, lime juice and salt. If desired, add chopped onion and tomatoes. Mash to desired consistency.
