WHOLE WHEAT DATE MUFFINS | |
2 c. less 2 tbsp. whole wheat flour 3 tsp. baking powder 3 tbsp. vegetable oil 1 egg 1 c. milk 1/4 c. honey 1/4 c. pitted, chopped dates Preheat oven to 400 degrees. Grease 12 muffin cups. In large bowl, combine flour, baking powder. In separate bowl blend together the oil, egg, milk and honey; add this mixture to dry ingredients, stirring only enough to moisten. Fold in dates. Spoon the mixture into greased muffin tins, filling each cup 2/3 full. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Makes 9 to 12 muffins. |
