WHOLE WHEAT BLUEBERRY MUFFINS 
3 c. whole wheat flour
1 c. sugar
1 tsp. salt
4 tsp. baking powder
2 eggs, slightly beaten
1/2 c. oil
1 c. milk
1 pt. blueberries

Mix together flour, sugar, salt, and baking powder. Add slightly beaten egg, oil, and milk. Stir in 1 pint blueberries. Dough should be thick.

Fill muffins cups half-full. Bake at 400 degrees for 20 minutes.

I substitute apple sauce for the oil and Splenda for sugar. at the end, Oh, add a handful of chopped walnuts and a handful of dark chocolate chips !! YUMMO! enjoy !!

This is a great recipe, although I think that 3 cups of flour is way more than needed. I ended up adding another cup or so of milk because the dough was too dry. After getting the dough to the right consistency, the muffins turned out great!
