WHOLE WHEAT MUFFINS 
1 egg
1 c. milk
2 tbsp. shortening
1/4 c. molasses or honey
2 c. whole wheat flour
1 tbsp. Rumford's baking powder
1/2 tsp. salt

Sift dry ingredients together. Beat egg, add all other ingredients, beat lightly. Fill greased muffin pans 2/3 full and bake in 375-400 degree oven for 15-20 minutes, just until barely brown on top and not doughy inside. Cooking them too long makes them dry. Makes 12.
