HONEY WHOLE WHEAT BRAN MUFFINS | |
2 pkgs. active dry yeast 2 1/2 c. warm water 4 tbsp. honey 1 tbsp. salt 4 tbsp. corn or safflower oil (low fat) 1 1/2 c. bran 6-8 c. whole wheat flour Put yeast in bowl. Stir in water, honey, salt, oil, bran and 4 cups of the flour. Beat with wooden spoon. Use hands and add enough of remaining flour to form stiff dough. Knead and place in oiled bowl. Turn dough over, oily side up. Cover and place in a warm area to rise until almost doubled in size. Take hands and roll balls of dough. Place in oiled muffin pan. When muffins have raised almost doubled in size, bake in oven at 375 degrees. After baking remove muffins from pan at once. |
