CARAMEL PIE 
1 c. sugar, browned in iron skillet
1 c. sugar
4 tbsp. flour
4 eggs, separated
3 c. milk
1 tsp. vanilla
1/2 stick butter
Baked pie shell

Mix sugar, flour, egg yolks, milk, vanilla, and butter to browned sugar. This will thicken immediately. Pour into baked pie shell. Top with meringue. Bake in hot oven until meringue is golden brown. Cool.

MERINGUE: In small bowl, beat egg whites with 1/4 cup sugar, added gradually, beat until stiff but not dry. Spread on top of pie, sealing carefully to edge of shell.
