CARAMEL PIE 
3 eggs, separated
1/3 c. flour
1/2 c. sugar
Pinch of salt
2 tbsp. butter, melted
2 c. milk, scalded or heated
1 c. sugar, caramelized in heavy skillet

Beat together egg yolks, flour, 1/2 cup sugar, salt and butter. Add milk and cook until it gets hot and just starts to thicken. Add caramelized sugar, stirring vigorously (or it will lump). Cook until thickened. Pour into cooked pie crust and top with meringue.

Timing your sugar to be ready when the other mixture is ready is very important.
