EGGPLANT ELEGANT 
1 med. eggplant, peeled, cubed
1 onion, diced
1/2 c. milk
3 slices bread, cubed
1 egg, lightly beaten
3 tbsp. melted butter
1 tsp. salt
1 green pepper, diced
4 oz. Mozzarella cheese, grated
6-8 stuffed green olives, sliced thin
1 tbsp. Worcestershire sauce

Boil eggplant and onion in small amount of water and drain. Combine with other ingredients except cheese. Bake in greased casserole at 350 degrees for 30 minutes. Remove; sprinkle cheese over top. Return to oven until cheese melts and is lightly browned. Yield 4-6 servings.
