ZUCCHINI STIR FRY 
1/4 c. butter
6 c. zucchini, diced
1 med. onion, sliced
1 bell pepper, sliced
3 tomatoes, quartered
1 1/2 c. cheddar cheese, shredded
1 c. butter flavored crackers; optional
Salt and pepper to taste

In large skillet or wok, melt butter. Add vegetables and salt and pepper to taste. Saute until tender. Sprinkle cheese over vegetables and top with crushed crackers if desired. Serve immediately. Serves 8.
