BEEF 'N BROCCOLI STIR FRY | |
1/2 lb. top round beef, trimmed of all visible fat 1/4 c. water 1 tbsp. soy sauce 1/2 tsp. cornstarch 1 tbsp. vegetable oil 2 c. fresh broccoli florets 1 c. thin strips of carrots 1 sm. onion cut in 6 to 8 wedges Few grains pepper Slice beef in strips (across grain i.e. across the narrow width). Mix 2 tablespoons water with soy sauce and cornstarch in small bowl. In 10 inch skillet, heat 1 1/2 teaspoons oil. Add vegetables and stir fry 2 minutes until broccoli is bright green. Reduce heat to low, add remaining 2 tablespoons water, cover and simmer 1 minute. Return beef to skillet. Stir in soy sauce mixture and add to skillet. Cook stirring constantly, until thickened, about 1 minute. Sprinkle with pepper and serve. Makes 2 servings. 359 calories per serving. |
