CARROT AND GREEN BEAN CASSEROLE | |
3 tbsp. butter 1 tbsp. chopped onion 1 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 1 1/2 c. milk 2 eggs, beaten 1/2 c. shredded cheese 2 c. cooked green beans 2 c. cooked sliced carrots 1/2 c. seasoned bread crumbs 3 tbsp. butter Cook onion slightly in butter; add flour and seasonings; blend well. Gradually add milk. Cook over medium heat, stirring constantly until thickened. Blend a small amount of hot mixture into eggs. Return to pan. Cook 1 minute. Add cheese and vegetables. Pour into a 1 1/2 quart casserole. Cover with crumbs and dot with butter. Bake at 350 degrees for 30 minutes. Serves 8. |
