CARROT CASSEROLE 
1 bag carrots, cooked, mashed & drained
1/2 c. melted butter
1 c. sugar
3 tbsp. flour
1 tsp. baking powder
1/4 tsp. cinnamon
3 eggs, beaten

Combine all ingredients and put in greased 2 quart casserole. Bake at 400 degrees for 15 minutes; reduce heat to 350 degrees and continue baking for 45 minutes. Serves 8.

This is really almost a dessert! When serving children or picky eaters, I call it "Mama Shaw's Sweet Treat". Gets 'em every time!
