CARROT CASSEROLE 
1 bag carrots, sliced & cooked until tender
1/2 c. chopped onion
1 sm. chopped pepper
1 or 2 hard-boiled eggs
1 c. chopped cheddar cheese
1 can mushroom soup

Mix all ingredients together and put in casserole dish and bake 1 hour at 350 degrees.
