STUFFED PORK LOIN | |
1 pork loin olive oil 1/2 c. chopped walnuts 1/2 c. chopped black olives 1/2 c. chopped water chestnuts 1/4 c. chopped cilantro 1/2 c. finely chopped mushrooms soy sauce salt and pepper to taste Hollow pork loin with clean knife sharpener poked through center longways and working loin with thumbs until small rounded hole goes all through length of pork loin (or carefully split open, horizontally with a sharp knife). Mix (using hands) about 1 teaspoon olive oil, walnuts, black olives, water chestnuts, cilantro, mushrooms, salt, pepper and about 1 tablespoon soy sauce. Push small amount of this mixture into hole in pork loin, pushing in from both ends until hole is filled with stuffing (or open slit and fill with stuffing, fastening with toothpicks or skewers). Rub outside of loin with small amount of soy sauce and olive oil. Bake in glass baking dish at 350°F for 30 to 60 minutes, or until meat thermometer reads 155°F or cook on grill, about 10 minutes per side, preferably rolling pork loin so that it cooks on all sides. Wonderful for dinner party. |
