MARINATED ROAST PORK LOIN 
1 (5 to 7 lb.) boneless pork loin roast
2 cans ginger ale
1/2 c. soy sauce
1 c. sherry
1/4 c. honey
1/4 c. chopped ginger
1 tsp. red pepper flakes
1 tsp. salt
1 tsp. pepper

Place pork loin in large glass or plastic container. Whisk together rest of the ingredients to make the marinade. Pour on top of pork. Cover and refrigerate overnight.

When you are ready to roast the meat, preheat oven to 375°F. Remove pork from marinade and place in large roasting pan. Season with a little more salt and pepper. Roast, uncovered, about 1 hour and 15 minutes or until meat thermometer reads 155°F. Cover with foil and let rest for 15 minutes before carving.
