SAXTON FAMILY SMOKED MEATLOAF 
1 lb. ground beef
1 lb. ground pork
1 small onion, chopped
2 cloves garlic, chopped
half a bell pepper (red/green or both)
1 (8 oz.) can tomato sauce
2 eggs
2 cups Kellogg's Rice Krispies
onion powder, garlic powder, salt, pepper and parsley flakes (to taste)
Monterey Jack Cheese (optional)

Mix all ingredients in a large bowl by hand. Shape into a loaf on a piece of heavy-duty foil and wrap, place in refrigerator for 1 hour.

Prepare pit and place hickory pieces around coals, place loaf on center of rack and open foil, cover with lid and open vents half way, cook 1 to 1 1/2 hours or til done. Let rest for 5 minutes before serving.
