IMPOSSIBLE BBQ RIB MEATLOAF | |
1 lb ground beef 1 lb ground pork (mild seasoned) 1 ½ cups BBQ sauce 1 medium white onion chopped (vidalia is best) 1 full tablespoon of crushed garlic (more or less to taste) 1 tsp pepper 1 tbsp. parsley ¼ cup milk of your choice (can hold until last depending on desired consistency) Liquid smoke use at least one tsp or more as desired (I prefer mesquite but apple wood or hickory is ok) ½ cup Ketchup paprika 1 tsp and ½ tsp chili powder to coat 2 loaves 1 ½ to 2 cups of "Fiber One Original Bran" cereal (can chop in blender if desired but really not necessary) ½ cup or more Oatmeal to thicken loaf to desired firmness/consistency if needed 1 tbsp dry chives (if you have fresh, sauté them with onion and garlic) 2 whole eggs whisked (or 3 egg whites if you prefer) 1 tbsp olive oil Put olive oil in sauté pan and heat to medium. Add onions and garlic and sauté until transparent and partially caramelized. Let cool before adding to meatloaf mixture. Mix well the beef, pork, pepper, parsley,chives, BBQ sauce and eggs. Add liquid smoke and mix well. Add hi fiber cereal last and mix well. If it is too dry add milk and if too wet add oatmeal. Mix well and form into two loaves. At this point add milk to moisten or add oatmeal to add firmness. Coat loaves with mixture of ¼ cup ketchup 1 tsp of paprika and sprinkle chilli powder on the top. (I use a brush to paint the top and sides well.) I cook them on an individual layer of aluminum foil each on top of a broiler pan so the fats can drain off while cooking. If you have a convection oven, cook at 375°F for an hour and a regular oven at 350°F for an hour. Check internal temperature to be sure it is up to 170°F degrees. It may require another 15 to 25 minutes to raise the internal temperature. Let it rest for at least 15 minutes before slicing. (This will allow the meat to set and flavors to blend well). Served best with steamed veggies and oven roasted potatoes. I serve one for dinner and pop the other into the freezer. Good luck! Submitted by: Rick |
