SMOKED PORK CHOPS WITH
SWEET-SOUR CABBAGE
 
2 tbsp. butter
1/2 c. diced onion
1 med. head cabbage, coarsely shredded
2 tbsp. all-purpose flour
2 tbsp. sugar
1 tsp. caraway seed
1/4 c. cider vinegar
6 smoked pork loin chops, each cut about 1 inch thick

About 2 1/4 hours before serving: Preheat oven to 325 degrees. In small skillet over medium heat, in hot butter, cook onion, stirring occasionally, until tender, about 5 minutes.

In 13x9 inch baking pan, lightly toss onion, cabbage, flour, sugar and caraway seed; pour vinegar over mixture. Top with chops. Cover lightly with foil and bake 1 3/4 hours or until cabbage and meat are fork tender.
