MEXICAN CORN BREAD 
1 sm. can Mexican corn (whole kernel)
1 1/2 c. self-rising corn meal
3 eggs
2/3 c. cooking oil
1/3 tsp. salt
1 tsp. (or less) black pepper
1 chopped onion
1 c. buttermilk

Mix all ingredients and bake for 45 minutes at 375 degrees.
