EASY CHEESECAKE 
Crust:

18 to 20 graham crackers
1/4 cup granulated sugar
4 tbsp. (1/2 stick) cold butter

Blend graham crackers, sugar and 4 tablespoons butter. Line spring-form pan.

Filling:

1 (16 oz.) small curd cottage cheese
2 (8 oz. ea.) pkgs. cream cheese
1 1/2 cups sugar
4 eggs, slightly beaten
1/3 cup cornstarch
2 tbsp. lemon juice
1 tsp. vanilla
1/2 cup (1 stick) butter, melted
2 cups (1 pint) dairy sour cream

In large bowl, mash cottage cheese. Add cream cheese. Mix until creamy. Add sugar. Continue beating. Add eggs. Reduce speed to low. Add cornstarch, lemon juice and vanilla. Beat until blended. Add butter and dairy sour cream. Blend on low speed. Pour into crust lined spring-form pan. Bake at 325°F for 1 hour and 10 minutes. Turn off oven and let stand in oven for 2 hours.
