RICE PUDDING 
1 c. uncooked rice
4 c. milk
1 c. sugar
1 can (12 oz.) evaporated milk
1 egg
1 tsp. cinnamon
1 tsp. butter
1 tsp. butter

Fill large pot with 2 cups water and 1/2 teaspoon salt. Add rice and cook approximately 20 minutes or until water is absorbed. Add regular milk and sugar. Boil on medium until creamy, about 45 minutes.

Beat the egg in evaporated milk and add cinnamon. Add to rice and bring to boil for about 1 minute. Remove from heat. Add vanilla and butter. Mix well.
