BEEF NOODLE SALAD | |
1/2 lb. angel hair pasta 1 lb. beef, cut into 1 inch cubes 1/4 cup balsamic vinegar 1/4 cup soy sauce 1/4 cup honey 1/2 tsp. crushed red pepper flakes 1/4 tsp. garlic salt 8 lettuce leaves 1 cucumber, sliced 1 celery stalk, sliced 1 red pepper, sliced 1 cup canned mandarin oranges 1/4 cup sliced almonds (optional) Romaine or red leaf lettuce works well but any kind of lettuce can be used. Prepare pasta according to package directions. Combine balsamic vinegar, soy sauce, honey, red pepper flakes, and garlic salt in sauté pan. Cook over medium heat and bring to a slow boil. Add beef and cook for a few minutes, turn and cook until desired doneness (usually 2-4 minutes per side). While beef is cooking, prepare a salad with lettuce, cucumber, celery, red pepper, and oranges. When pasta is cooked, drain and place on top of salad. Pour beef and sauce over pasta and salad. Top with nuts. Enjoy this quick, hearty, fresh dinner on a Summer night when it's too hot to turn on the oven. Serves 4. Submitted by: Suzanne Martin-Smith |
