MICROWAVE SPANISH RICE 
2 c. minute rice
Chopped onions
Salt and pepper
2 cans tomato sauce
Green pepper
Water

Brown 2 cups minute rice with chopped onions and green pepper. Put this in a microwaveable dish approximately 8 x 12 x 2 inch and add 2 cans of tomato sauce and water to cover rice; then salt and pepper. Add more water if not moist enough. Microwave on high about 6-7 minutes until tender. This is a good dish with Mexican food, but I also use it with stuffed peppers, cooking them right in the rice mixture. I also use it with pork chops, browning first and then finish cooking in the rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
