DUTCH CORN OYSTERS 
2 c. grated corn
2 eggs
2 tbsp. flour
1 tbsp. butter
1/2 tsp. salt
Pinch of pepper
Pinch of cayenne pepper

Use fresh or canned grated corn. Mix in flour, egg yolks, salt, a pinch of black and cayenne pepper and melted butter. Stir in the stiffly beaten egg whites. Drop spoonfuls to look like fried oysters, on hot pan and brown.
