CRANBERRY - ORANGE MUFFINS | |
1 3/4 c. flour 5 tbsp. sugar 2 tsp. baking powder 1/2 tsp. salt 1 beaten egg 3/4 c. orange juice 1/3 c. cooking oil 1 c. fresh or frozen cranberries, chopped Grease muffin tins. In medium bowl stir together flour, 2 tablespoons sugar, baking powder and salt. Make a well in center. In small bowl combine egg, orange juice and oil; add all at once to flour mixture. Stir just to moisten. Toss cranberries with 2 tablespoons sugar; fold into batter. Fill muffin tins 3/4 full. Sprinkle tops with 1 tablespoon sugar. Bake at 400 degrees for 18 to 20 minutes. Makes 12 muffins. |
