CRANBERRY - ORANGE MUFFINS | |
3/4 cup milk 1/2 cup vegetable oil or melted butter 1 egg 2 cups all-purpose flour 1/3 cup sugar 3 tsp. baking powder 1 tsp. salt (scant) 1 tbsp. grated orange peel 1 1/2 cups cranberries Preheat oven to 400°F. Grease 12 muffin cups. Beat milk, oil/butter, and egg. Stir in flour, sugar, baking powder, and salt all at once, just until moistened. Add orange peel and mix. Batter will be lumpy. Fold in fresh cranberries, stir. Fill muffin cups. Bake for 20-25 minutes or until golden on tops and a wooden pick inserted in the center of a muffin comes out clean. Immediately remove from pan. |
