SPINA'S HOME MADE TRUE ITALIAN
SAUCE
 
My home town is Utica, NY. I now live here in VA. This sauce is a family recipe going way back. My Grandfather owned the White Elephant night club on bag square on Genesse Street, Utica NY. My Grandfather and father were famous for their Italian sauce. You will enjoy this sauce.

1/2 cup olive oil
1 whole onion, diced
1 whole green pepper (optional)
4 (29 oz. ea.) cans Hunt's tomato sauce
1 (28 oz.) can Contadina crushed tomato sauce
2 (6 oz. ea.) cans Contadina tomato paste
2 quarts water (8 cups)
2 garlic cloves
1/2 tsp. oregano
1 tbsp. sweet basil
1/2 cup fresh parsley, diced up
1 tbsp. white sugar
1/2 cup red burgundy wine
3 bay leaves

Start with a large (8-quart) sauce pan, cover the bottom of sauce pan with olive oil. Dice up your whole onion, put in pan and let brown. Once it is brown add your sauces into pan and add your paste. Add 2 quarts of water and mix. Then add remaining ingredients. Do not mix ingredients yet, once in sauce, let sauce come to a boil first, then mix, lower stove to low temp. Leave lid cracked a little.

For your meats, brown your favorite meatballs, pork ribs and/or sausage first. Once that is done then put into sauce. Let simmer for 6 hours, every 1/2 hour stir sauce. Do not let it burn on bottom of pan.

Note: You may add a whole green pepper to the sauce if you would like.

Makes 5 quarts sauce.
