BEEF MARSALA | |
Preparation time: 20 minutes. Cooking time: 15 minutes. Baking time: 1 hour at 350 degrees. Serves: 4. 1 lb. top beef round, cut into cubes 2 tbsp. lightly salted butter 1 sm. onion, chopped 1/2 lb. fresh mushrooms, halved 1 1/4 c. Marsala wine or other dry red wine 1 tsp. salt 1/8 tsp. dried thyme leaves 1/4 tsp. dried tarragon leaves 1/8 tsp. red pepper 1 tbsp. chopped green onion 1 tbsp. Worcestershire sauce 1/4 tsp. Tabasco sauce 1 1/2 tbsp. all-purpose flour 1/2 lb. green beans, slightly steamed 1. Brown beef in butter in large iron skillet over medium high heat. 2. Add chopped onion and mushrooms. Saute for a few minutes. 3. Add 1 cup wine and seasonings. Place in 1-quart casserole. Cover. 4. Bake at 350 degrees for 1 hour. 5. Remove from oven. Taste to see if more salt is needed. 6. Blend flour with remaining 1/4 cup red wine. Stir into meat dish. Mix in steamed green beans. 7. Serve with steamed rice, if desired. TIPS: For a more elegant dish you can add 1 can oysters or 12 ounces fresh oysters. Add liquid from oysters with the wine. Add oysters at the end and bake 10 minutes. |
