SWEET POTATOES WITH BOURBON AND
WALNUTS OR PECANS
 
About 4 1/2 lbs. sweet potatoes baked in jackets
3/4 c. + 2 tbsp. butter
1/3 - 1/2 c. bourbon
1/2 tsp. salt
1/2 c. coarsely chopped walnuts or pecans (I use pecans) (I also use a bit of brown sugar)

Scoop out pulp from potato skins. Beat in electric mixer until smooth. In saucepan heat 3/4 cup butter, the bourbon (and optional salt) over low heat; add to potatoes and beat until blended. Turn into greased baking dish. Dot with remaining butter and sprinkle with nuts. Bake in 350 degree oven for 20 minutes. Serves 8.
