SWEET POTATOES WITH BOURBON &
WALNUTS
 
10-12 sweet potatoes, baked in the jackets until soft (40-60 min.) or 3 cans, drained
3/4 c. plus 2 tbsp. butter
1/2 c. bourbon
1/2 tsp. salt
1/2 c. walnuts or pecans

Cut cooked potatoes in half and scoop out pulp. (You should have approximately cups.) Beat until smooth.

In saucepan, heat 3/4 cup butter, bourbon and salt until butter melts. Add to potatoes and beat until blended. Turn into greased baking dish. Dot with remaining butter and sprinkle with nuts. Bake at 350 degrees for 20 minutes.
