SWEET POTATOES WITH BOURBON AND
WALNUTS
 
3 cans (18 oz. each) vacuum packed sweet potatoes, drained
3/4 c. plus 2 tbsp. butter
1/3 to 1/2 c. bourbon
1/2 tsp. salt
1/2 c. coarsely chopped walnuts or pecans

Put sweet potatoes in bowl. Beat with mixer until smooth. In saucepan heat 3/4 cup butter, the bourbon and salt, add to potatoes and beat until blended. Turn into greased baking dish. Dot with remaining 2 tablespoons butter and sprinkle with walnuts. Bake 20 minutes at 350 degree oven.
