SQUASH CAKES 
3 c. grated yellow squash
1 c. grated cheddar cheese
1 egg
1 c. Bisquick
3 tbsp. parsley flakes
1/2 c. chopped onion
Garlic salt to taste

Mix together and fry like pancakes, dropping by spoonfuls into skillet with hot oil, butter or Pam. Flatten out with spoon to make a patty. Fry on both sides until done. Can serve with tomato slices. These are delicious.
